High Protein Low Carb Zucchini Lasagna

800 g ground beef (minced beef)
1 large onion
2 carrots
1 tbsp vegetable oil
3 cloves of garlic
1 cup beef stock (broth)
4 zucchini (courgettes)
250 g mascarpone
1/4 cup Cheddar cheese, grated

  1. Peel and chop the onion, garlic cloves and carrots.
