Protein Crepes

8 egg white (270g, 1 1/4 cup)
5 tablespoons coconut flour (40 g)
2 tablespoons unsweetened almond milk or unsweetened vanilla almond milk
1-2 tablespoons crystal sugar free sweetener - optional, adjust regarding sweetenes desired or replace by 1/4 tsp sea salt for savory crepes
1/4 teasooon ground cinnamon - optional
For the pan :
1/2 teaspoon extra virgin coconut oil or vegetable oil of your choice

  1. Make the crepe batter
  2. In a large mixing bowl, add all the ingredients.
  3. Use an immersion blender to combine all the ingredients together. You can also use a blender on low speed. Blend for less than 30 seconds to avoid to add too much air in the batter. Using one of those methods avoid coconut flour lumps in the batter, a manual whisk is not recommended!
