Chewy Almond Joy Candies

1/3 cup Trim Healthy Mama Gentle Sweet or my sweetener
1 tsp vanilla
1 cup finely shredded coconut
2 tbsp coconut oil
3 tbsp canned coconut milk
Pinch of salt
3.5 oz 85% dark chocolate or sugar free chocolate
24 whole almonds or more if you make smaller bars

  1. Melt coconut oil and coconut milk (if its solid) in the microwave. It takes about 30 seconds. Stir in the sweetener, coconut, vanilla, and salt.
  2. Shape into 12 bars and press almonds into the tops.
  3. Melt the chocolate. I do this by breaking the chocolate bar into chunks and microwaving on high for 30 seconds. Stir. Microwave 30 more seconds. Stir. Repeat. Once it is 80% melted stop microwaving and just stir until it completely melted.
