3 tbsp Heavy Cream
2 oz Plain Cream Cheese
2 Eggs
1 tbsp Lakanto Monkfruit sweetener or Natural Sugar Substitute of Your Choice
1/2 tsp Baking Powder
1/2 tsp Vanilla Extract

  1. Blend all ingredients until smooth. Let the batter rest to thicken.
  2. Meanwhile, lightly grease a medium pan, pour about 1/3 cup of batter into frying pan to form each pancake.
