Loaded Cauliower Mash

1 large head cauliower chopped into orets
2 tablespoons butter
2 tablespoons heavy cream
2 oz. cream cheese
1.5 cups cheddar cheese (12 oz/200 g)
4 slices cooked bacon
1/4 cup chopped green onions (1 oz/30 g)

  1. Preheat oven to 350F (175 C).
  2. Add one inch of water to the bottom of a microwave safe container or a large pan. Steam cauliower in microwave or in a pan over medium high heat until very soft. Drain liquid.
  3. To a blender or food processor, add the steamed cauliower, butter, heavy cream and cream cheese. Blend until smooth, like mashed potatoes.
