Triple Pumpkin Chili

1 tablespoon olive oil
1 medium onion, diced
1 medium red pepper, diced
4 garlic cloves, minced
2 tablespoon ground cumin
2 tablespoons chili powder
1 teaspoon smoked paprika
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

  • Coat the bottom of a large pot with oil and place it over medium heat.
  • Add the onion and pepper. Sauté until the onion becomes soft and translucent, about 5 minutes.
  • Add the garlic, cumin, chili powder, paprika, cinnamon and cloves. Sauté for about 1 minute more, until very fragrant.
