3 stalks celery diced
1 large yellow onion diced
4-5 garlic cloves minced
2 large carrots peeled & chopped
1 large green bell pepper diced
5 1/2 - 6 cups vegetable broth I prefer low sodium
14.5 oz canned diced tomatoes

  1. Drizzle 2 tbsp of olive oil into a large pot or pan, then place the pan over medium heat.
