Weight Loss Soup

2 lbs lean ground turkey or shredded chicken
1 onion chopped
4 cloves garlic minced or pressed
1 red bell pepper seeded and chopped
1 yellow bell pepper seeded and chopped
8 oz. baby bella "crimini" mushrooms sliced
1 - 14 oz can diced tomatoes
1 - 32 oz of reduced-sodium tomato juice
1 Tbs. fresh lemon juice

  1. In a large pot, brown ground turkey or cook chopped chicken. There should be very little fat, is there is fat, drain.
  2. Add in onion, garlic, peppers, and mushrooms and cook until soft, about 5 minutes. Stir in remaining ingredients, except cilantro and parsley. Cover and simmer 15 minutes. Stir in cilantro and parsley.
